St. JOHN is coming to Wayfinder.

On 20 November, London's legendary St. JOHN comes to our new Winery & Farm in Wilyabrup, opening this August, for an exclusive dinner as part of Pair'd 2026.

A Michelin star held since 2009. A nose-to-tail philosophy that became a global movement. Anthony Bourdain's favourite restaurant in the world. We are incredibly proud to welcome St. JOHN to Wayfinder.

The evening brings together St. JOHN co-owner and wine connoisseur Trevor Gulliver, who also runs his own domaine in France, Boulevard Napoléon, alongside our Executive Chef Brendan Pratt, Winemaker Andrew Trio and Market Gardener Amy Dyson.

Guests will be welcomed with canapés and sparkling wine on the lawn, before sitting down to a 6-course menu shaped by what our market garden and estate are producing in November, complemented by Pardoo Wagyu. St. JOHN's nose-to-tail precision meets West Australian produce at its seasonal best, each course matched with Wayfinder wines.

Join us for the first pour of our upcoming Chardonnay releases, with our winemakers guiding you through what’s landing over the coming months. Between sips, L Van Groove keeps the room moving on 70s vinyl, think The Crusaders, George Benson, Stevie Wonder, Bill Withers and more. On the food side, we’re running a one-night menu made to match Chardonnay.
