This glides over the palate with bright red fruit. It is polished with just the merest hint of savoury, herbal notes. It has depth, with some density and volume. Very affable with the expected hint of dry tannins on the end.

Winemaking
Our Cabernet blocks were hand-harvested and destemmed into stainless steel open-top fermenters. Up to 10% of the juice was drained using the saignée method to enhance texture and palate weight. The must was pumped over twice per day during peak ferment, with a single rack and return to break up the cap and promote extraction. After 2-3 weeks on skins, the fwines were drained and pressed into 10% new French oak and matured for 10 months before blending.
