Winemaking
The 2023 vintage produced excellent Malbec, showing an intense spectrum of wild dark fruit balanced by fresh natural acidity. The fruit was hand-harvested and sorted into a stainless-steel fermenter. Ten percent of the juice was drained from the must to increase the skin-to-juice ratio, contributing greater palate weight and concentration to the finished wine. The must was pumped over twice a day during peak fermentation, with a single rack and return used to break up the cap and encourage gentle extraction. After 16 days on skins, the free-run wine was gravity-drained to tank before being transferred to French oak for malolactic fermentation. Following 10 months’ maturation, the wine was racked to tank and polish-filtered prior to bottling.
